I'm right there with you on that one. Though I do also enjoy them fried.
We're very familiar with the armadillo down here. After all we do have the famous Armadillo World Headquarters located in Austin (state capital city). My best buddy growing up had a armadillo slide for his Cub Scout neckerchief. We ran over the thing on the way to a campout, his Dad got out and cut off the tail, cleaned it and fashioned the slide. We'll even get the occasional 'dillo roaming the neighborhood, along with possum and other wildlife like coyotes and even a bobcat. Yet never considered the critter edible in spite of the claims by that co-worker.
